Greek Lentil Power Bowl

 1 cup dry lentils
 2 cups water
 ¼ cup non-fat Greek yogurt
 1 tbsp dill
 1 tbsp lemon juice
 1 tsp honey
 ½ cup sliced cucumber
 ½ cup sliced cherry tomatoes
 ¼ cup diced red onion
 ½ cup canned chickpeas (drain liquid)
 ¼ cup crumbled feta cheese
 Salt and pepper

Combine the lentils, water, and a dash of salt in a pot. Bring the water to a boil. Once the water is boiling, cover the pot and reduce the heat. Cook for 45-50 minutes, or until the lentils are soft.

While the lentils cook, combine the Greek yogurt, dill, lemon juice, and honey in a small bowl. Stir with a spoon until it is all mixed.

Once the lentils are cooked, place them in a large bowl. Add in the cucumber, tomatoes, red onion, chickpeas, feta cheese. Add in the Greek yogurt dressing, and top with salt and pepper as desired.
