Winter Greens and Citrus Salad

 6 cups mixed winter greens (spinach, kale, swiss chard, and or radicchio leaves)
 1 grapefruit
 1 naval orange
 1 blood orange
Dressing
 ¼ cup lemon juice
 1 tbsp honey
 1 tbsp Dijon mustard
 3 tbsp olive oil

Peel citrus fruits, then slice each fruit into rounds. Arrange the fruit slices on a serving platter.

Make the dressing by combining all the dressing ingredients into a jar with a lid. Shake the jar well until the dressing is emulsified. Alternatively, you may whisk these ingredients together in a small bowl. Set aside.

Combine the winter greens into a large bowl. Toss with the dressing. Arrange dressed greens over citrus slices. Enjoy!
